
Deluxe Guacamole is perfect when you want something extra special to accompany your nachos, burritos or it can be used as a dip with tortilla chips.
The easiest way to collect pomegranate seeds is to cut the pomegranate in half. One half at a time, submerge under water in a large mixing bowel and then pull the seeds out. They will need to be tidied up, to remove the white pith. You can use a strainer to collect any seeds that are in the water. Repeat with the second half of the pomegranate.

Deluxe Guacamole
Ingredients
- 2 avocados mashed
- ½ red onion finely diced
- ½ bunch coriander leaves 1 tablespoon reserved
- 1 pomegranate
- 1 lime zest and juice
- generous pinch of salt
Instructions
- Prepare the ingredients as described and collect the seeds from the pomegranate, reserving 1 tablespoon. Combine all ingredients together in a mixing bowl and then garnish with the reserved pomegranate and coriander leaves.
- Serve with your favourite Mexican food or as a dip.
- Store in the fridge in an airtight jar for up to 3 days.
